- 1 lbs Chicken breast, boneless skinless
- 2 large Sweet potatoes
- 1 lbs String green beans
- 3-4 Garlic cloves, chopped
- 1 inch Fresh ginger
- 1 bunch Cilantro
- 1 Lemon, for lemon juice
- 1/4 tbsp Paprika
- Per taste Salt
- Per taste Pepper
Take a pestle and make paste of ginger and garlic by grinding it slowly. Alternately, you can also chop in a food processor. For best results, use the pestle to make ginger garlic paste. Also roughly chop fresh cilantro.
Squeeze the juice out of 1 lemon and set it aside.
Take the boneless skinless chicken breast and marinate it with olive oil, ginger garlic paste, chopped cilantro, lemon juice, and the seasonings.
Cut sweet potatoes in the shape of fries and along with the string green beans season it with salt, pepper, and little olive oil.
Next, take a baking tray and put the green beans and sweet potatoes in it and put them in the oven to bake for 15 mins. Make sure to pre-heat the oven at 425 degrees.
We will grill the chicken on a cast iron skillet. Take the skillet and put it on high heat.
Once it is heated add the marinated chicken in it and cook both sides on medium-high heat for 3-4 mins each side or until the chicken has a brown crust.
Check the vegetables in the oven after 15 mins of cooking in the oven. If they sweet potatoes are soft on inside and have a crust on outside then they are done.
Serve the chicken with green beans and sweet potato fries in a bowl.
