- 1 lbs Salmon
- 1/2 Yellow bell pepper
- 1/2 cup Cherry Tomatoes
- 1 Lemon
- 1/2 cup Portobello mushrooms
- 3-4 Garlic cloves, chopped
- 2 tbsp Soy sauce
- 1 tbsp Chopped garlic
- 1 tbsp Honey
- Per taste Salt
- Per taste Pepper
Let’s start with marinating the salmon and keeping it aside until we do the rest of the prep.
Put salmon in a bowl. Add all the seasomnings including salt, pepper, honey, soy sauce, lemon juice (1/2 lemon and keep the other half aside for later) and chopped garlic.
Mix it well and let it sit aside.
Switch on the oven and let it start pre-heating. Oven should be at 425 degrees. Meanwhile, we do rest of the prep.
Cut the bell peppers in 1-inch squares and put it on the baking tray with cherry tomatoes, salmon, and portobello mushrooms.
Once oven gets pre-heated to 425 degrees, add the baking tray in the oven and let cook for 15 mins (change salmon sides halfway in between).
Take out the baking tray and add the cooked salmon and vegetables in a bowl. Slice the other half of lemon to garnish. Serve and enjoy!
