For the salad
- Spinach or Spring Mix
- 1-2 spoons Pumpkin Seeds
- 3 Cashews, optional
- 1-2 Cherry Tomatoes
- 4-5 Black Olives
- 1 can Chickpeas
- Feta Cheese, to sprinkle on top
- 1 spoon Olive Oil
- 1 Lime Juice, freshly squeezed from lime
- Salt, per taste
- Pepper, per taste
Rinse the chickpeas from the can thoroughly and put it in a bowl. Pat dry them with a dry paper towel and keep aside.
Cut avocado, cherry tomatoes, and cashews in small cubed pieces. You can also cut the olives into smaller pieces, but I kept them as is for this recipe.
Take a bowl and add all the leafy greens mentioned in the ingredients list.
Add the avocados, cherry tomatoes, cashews, and olives into the greens.
Add the chickpeas in the bowl on top of the greens. Also add the seasonings along with lime juice and mix it really well.
Sprinkle some feta cheese on top and enjoy!
