For Lentils
- 1 small Onions, chopped
- 1 small Tomato, chopped
- 3-4 cloves Garlic, chopped
- 1 cup Lentils, yellow
- 1/4 cup Cilantro, chopped
Spices
- 1/4 tbsp Turmeric
- 1/4 tbsp Kashmiri Red Chili Powder, this is not as spicy as red chili
- Pinch Hing (Asafoetida powder), available at any India store
- Per taste Salt

Lentils

After thoroughly washing and rinsing, add lentils in a pressure cooker with about 1L of water.

Add salt, turmeric, and the Kashmiri red chili powder. Note that Kashmiri red chilo powder is not spicy and won’t add add any heat in the lentils. It only adds liitle bit of color. You can also use paprika or regular red chili powder if you like some heat or skip it altogether.

Cover the pressure cooker and let it pressure cook on medium heat for 3-4 whistles. Turn off the heat after 3-4 whistles an let the pressure cool down for a little while. DO NOT OPEN the pressure cooker right after turning off the heat.
Onions and Tomato Mix

In a pan heat avocado oil, and add asafoetida powder with chopped garlic. Once it starts to give some aroma, add the chopped onions and tomatoes.

Let it all cook for sometime (say 10 mins) or until the tomato becomes soft and mushy.

Next add this onion and tomato mixture into the lentil soup in pressure cooker and let it simmer for 10 mins. Adjust the water according to your liking.

Add chopped cilantro as a garnish and enjoy with whole wheat nan or rice!
