  • 1 tbsp Avocado oil
  • 1 medium Onion, chopped
  • 1 medium Red Bell Pepper, chopped
  • 1 small Tomato, chopped
  • 3-4 cloves Garlic, chopped
  • 1 cup Black beans, rinsed, drained
  • 1-1.5 tbsp Salsa
  • 1 Avocado, chopped
  • 1 cup Frozen corn
  • 1 cup Romaine lettuce, chopped
  • 1/4 cup Cilantro, chopped

Seasoning

  • 1/2 tbsp Cumin powder
  • 1/4 tbsp Red chili powder
  • Per taste Salt
  • Per taste Pepper

    In a large skillet, heat avocado oil. Once it is hot, add chopped garlic and stir fry until it leaves aroma.

    Once it starts to smell, add the peppers, corn, and onion along with the seasoning and stir fry for few mins (3-4) only.

    In a separate large bowl, add the romaine lettuc, onions, corn, and pepper mixture with tomatoes and chopped avocado. Also add the rinsed and drained black beans and garnish with fresh cilantro!

    Serve with a wedge of lime and enjoy!
