- 3 cups Cooked rice, white/brown
- 300 g Frozen veggies
- 4 cloves of Garlic
- 2 inch Ginger
- 500 g Tofu, Extra firm
- 3 tbsp Soy Sauce
- 2 tbsp Vinegar
- 3 tbsp Avocado oil
- 1 tbsp Corn starch

- 1/2 tbsp dried oregano
- 1/4 tbsp turmeric
- Per taste Paprika
- Per taste Salt

For Tofu

Start by applying avocado oil to the tofu and adding corn starch. This will make tofu crispy.

Next, season tofu with all the spices and let it rest for a couple of mins.

Start the oven by pre-heating to a temperature of 400 degrees. Add the tofu and let it bake for 12 mins.

Keep checking in between and adjust time accordingly. Tofu must come out brown-ish in color and crispy.
For fried rice
- 1
Heat avocado oil in a non-stick pan and add minced ginger and garlic.

Saute ginger and garlic for 3-4 mins or until it starts to release aroma.

Next, add veggies of your choice. I used a bag of frozen mix veggies which has peas, beans, cauliflower, broccoli etc. You can use fresh veggies of your choice also.

Saute the veggies for 3-4 mins then add cooked rice in it. Make sure the heat is on high since fried rice best comes out when made on high heat.

Then add soy sauce, salt, pepper, and vinegar and mix well. Cook for another 2-3 mins and that’s it.

Serve hot with a side of tofu as protein to complete this healthy balanced meal.
